Dr Annette Kuehn, together with collaborators and recognized experts in the field, reviews current research on the cellular and molecular steps that occur when a food-allergic patient is exposed to food allergens. They also highlight gaps in our current understanding of the mechanisms underlying reactions to food and inter-individual variability in thresholds tolerated and reaction severity.
